Trader Joe’s Almond Chipotle Dip

Trader Joe’s Almond Chipotle Dip has a little kick, tons of flavor, and works well in breakfast, lunch, dinner, and snack recipes.
We use this versatile dip in a wide variety of recipes inside The Healthy Eating at Trader Joe’s Plan. When we grab a container, we make sure every bit gets used throughout the week. (Great way to reduce food waste!)
Below is a sampling of some of our favorite recipes featuring this delicious dip. And to save serious time in the kitchen, we cook once, eat twice. All our recipes are written for two servings so we can enjoy one today and the other tomorrow!
Recipe #1:
Chipotle Egg Lavash Roll
Makes two servings.
All ingredients purchased @ Trader Joe's
Ingredients:
- 1 piece Whole Wheat Lavash Bread
- 1 cup 100% Liquid Egg Whites
- ⅛ cup Almond Chipotle Dip
- 8 oz Mini Tomatoes
Directions:
COOK EGGS FOR BOTH DAYS

Spray a pan with oil & preheat on medium. Pour in the egg whites. Cook, stirring frequently, until no visible liquid egg remains, about 2-3 minutes.

Place half the eggs on a plate for today and store half in fridge for tomorrow.
ASSEMBLE YOUR PLATE EACH MORNING
- If desired, heat up your half-lavash for 1-2 minutes in a microwave, toaster oven, or nonstick pan.

Mix 1 tablespoon dip into today's portion of eggs. Place some of the egg mixture on one side of the ½ lavash, and then roll it up. Cut in half if desired.

Enjoy any remaining eggs with 4 oz. (¼ container) tomatoes on the side.

Recipe #2:
Spicy Turkey Burger
Makes two servings.

Ingredients:

2 Turkey burgers
-
¼ cup Almond Chipotle Dip
-
4 slice Whole Grain Bread (toasted)
-
½ jar Fire Roasted Red Peppers
-
½ Avocado (sliced)
-
1 Persian Mini Cucumber (sliced)
Directions:

For best results, make 1 serving each night.

Spray a skillet with oil, preheat on medium-high, and cook burger 6-8 minutes per side, or until done.

Spread 1 tablespoon dip on 1 slice of toast. Add ¼ jar bell peppers (1-2 large pieces) & the cooked burger. Spread ¼ avocado on the other slice of toast & place it on top.

Enjoy your burger with 1 tablespoon dip & ½ cucumber on the side.

Recipe #3:
Chipotle Pea and Pepper Crunch
Makes two servings.

Ingredients:

½ package Sugar Snap Peas
-
1 Bell Pepper (any color), sliced
-
¼ cup Almond Chipotle Dip
-
30 Original Savory Thin Mini Crackers
Directions:
-
For each serving, pack: ¼ package snap peas; ½ bell pepper; 2 tablespoons dip; 15 crackers.

When ready to eat, simply enjoy the veggies & crackers with the dip.

Recipe #4:
Veggie & Sausage Tortilla Pizza
Makes two servings.

Ingredients:

2 Organic Sweet Italian Chicken Sausage, thinly sliced
-
16 oz Yellow Squash, thinly sliced
-
¼ jar Fire Roasted Red Peppers, diced
-
2 Whole Wheat Tortilla
-
¼ cup Almond Chipotle Dip
-
½ cup Lite Shredded Mozzarella Cheese
Directions:
PREPARE SAUSAGE-VEGGIE TOPPING FOR BOTH NIGHTS

Spray pan lightly with oil & preheat on medium-high. Add the sliced sausage in a single layer & cook 2-3 minutes without stirring until one side is nicely browned. Then stir (or turn each piece over with tongs). When browned on both sides, remove from pan & set aside.

Spray pan again lightly with oil & add the sliced squash in a single layer. Cook 1-2 minutes without stirring to brown one side and then stir to brown the other side.

Return the sausage to the pan & stir in the fire roasted peppers. Sauté 1-2 more minutes. When done, store half in fridge for tomorrow & reserve half for tonight.
MAKE ONE PIZZA EACH NIGHT

Preheat oven to 400°F, place tortilla on a nonstick baking sheet & bake for 3-5 minutes until slightly crispy. (Alternatively, place directly on the rack of your toaster oven and toast for 3-5 minutes.)

Remove tortilla from oven, spread 1 tablespoon of Almond Chipotle Dip on top, add some of tonight's toppings, and sprinkle with ¼ cup of cheese. (If using a toaster oven, don't spread the cheese all the way to the edges to prevent dripping.)

Broil 2-4 minutes until cheese melts. (We find the crust stays crispiest if you place the pizza directly on the rack of your toaster oven.)

Enjoy your pizza with the remainder of today’s veggie-sausage mixture on the side.
