Filled with olives & onions Trader Joe’s Greek-Style Chicken Salad is already so delicious, but we make it even better by adding fresh dill and extra veggies. With more nutrients, more fiber, and more flavor, we turn one container into two satisfying, balanced lunches.
And to save time in the kitchen, we prep lunch for two days in a row. (Cook once, eat twice!)

Makes 2 servings
All ingredients purchased @ Trader Joe's
Ingredients:
- 2 Persian cucumbers, diced
- 1 tomato, diced
- ½ package fresh dill, chopped
- 2 slices whole grain bread
Directions:
- Combine the chicken salad, cucumbers, tomato, and dill in a bowl.
- Mix well, divide into 2 portions, and store in fridge.
- For each serving, pack:
- 1 portion chicken-veggie mix
- 1 slice whole grain bread
- When ready to eat, toast the bread if desired. Top the toast with some of the chicken salad mix and enjoy the rest on the side.
