Healthy Trader Joe's Haul: December 2023

 

One of the joys of shopping at Trader Joe’s is discovering new & seasonal products each month. Incorporating these products into our recipes helps us add a variety of flavors & nutrients to our meals.

Here are six products our nutritionist Narina is cooking with this month, what she loves about them, and how she’s using them to create healthy meals & snacks.

White Bean Chicken Chili Soup 

This southwest-style chili has a rich & creamy broth base. It’s also thick & chunky with plenty of white beans, corn, poblano peppers, and organic chicken breast. It’s not too spicy but is full of flavorful herbs & spices like garlic, chili powder, cilantro, cumin, oregano, cayenne, and a squeeze of lime juice. Yum! 

Serving suggestion:

  • Turn one container into two hearty & satisfying meals by adding sautéed veggies to the soup and enjoying a slice of whole grain toast on the side.

 

 

Harvest Warm Bowl

If you’re looking for a quick & easy lunch that’s also super healthy, this is it! With rice as the base, this bowl includes quintessential fall ingredients like roasted sweet potatoes, kale, apples & cranberries. The balsamic maple vinaigrette adds a delicious flavor that brings it all together.

Serving suggestion:

  • To turn this bowl into a balanced meal, add beans for protein and cherry tomatoes or fire roasted red peppers for extra flavor & nutrients.

 

 

Bulgur Pilaf 

Bulgur is a whole grain made from wheat berries and is packed with fiber, protein, vitamins & minerals. You’ll find this delicious pilaf in TJ’s frozen section. The butternut squash gives it a delicious fall twist and the feta cheese adds a satisfying Mediterranean flavor.

Serving suggestion:

  • Add slivered almonds for extra protein & crunch and asparagus for extra fiber & nutrients.

 

 

Chimichurri Sauce

This herby, spicy, and silky-smooth sauce adds a delicious flavor boost to almost any dish. It’s made of finely chopped parsley & cilantro mixed with garlic, cumin, crushed red pepper, oil & vinegar. 

Serving suggestion:

  • This sauce works great as a marinade for shrimp or fish. You can also use it in stir fries and omelets or mix it with hummus for a delicious dip.

 

 

Green Goddess Dressing

You’ll find this tasty, nutritious, low-calorie dressing in the refrigerated section near the lettuce. It’s made from fresh & simple ingredients: avocado, green onion, chives, basil, parsley, garlic, onion, lemon juice, apple cider vinegar, and olive oil.

Serving suggestion:

  • This dressing is extra delicious on salads with hard-boiled eggs. You can also combine it with Greek yogurt to make a delicious dip for veggies & chips.

 

 

Persimmons

In addition to the fun products, we love that Trader Joe’s brings in new produce each season. And one of our favorite fruits, persimmon, is in the stores right now. This sweet fruit with a honey-like flavor is in season from October through January. It’s a great source of manganese and vitamins A & C. 

Serving suggestion:

  • Pair your persimmon with unsalted nuts for a perfect morning snack. Or dice it up and add it to a parfait or sprinkle it on your salad.
