Roasted Brussels Sprouts with Baby Beets & Pomegranate Seeds


This delicious recipe is simple enough for even a novice cook to prepare in 20 minutes, and delicious enough to impress your friends at your next dinner party!

We start with Trader Joe’s Brussels Sprouts Sauté Kit, which is quite flavorful on its own, but we’ve added an extra punch of sweet & sour with baby beets & pomegranate seeds.

Besides tasting amazing, this dish is a nutritional powerhouse. Brussels sprouts & pomegranate seeds are both extremely high in vitamins K & C. Beets are packed with a variety of nutrients, including potassium & iron. All three are high in fiber.

Makes 2-4 servings*
All ingredients purchased @ Trader Joe's



  • 1 pack Brussels Sprouts Sauté Kit (includes hazelnuts, Parmesan cheese & vinaigrette)
    oil spray

  • 1 pack Steamed & Peeled Baby Beets, cut into cubes

  • ½ cup pomegranate seeds


  1. Preheat oven or toaster oven to 425°.

  2. Line a baking sheet with aluminum foil.

  3. Pour Brussels sprouts onto baking sheet and spread out into a single layer.

  4. Spray lightly with oil.

  5. Roast for 10-15 minutes or until tender-crisp.

  6. Add the beets and roast another two minutes.

  7. Remove from oven, add half the vinaigrette and gently toss. (You can save the other half of the dressing for another dish!)

  8. Add pomegranate seeds, hazelnuts and Parmesan cheese. Enjoy!

*For a complete meal: divide into two servings and add your choice of protein.

*For a side dish: divide into four servings.
