Spaghetti with Meat & Squash

 

Healthy eating doesn’t have to be complicated and this dinner is proof.

This is one of our favorite go-to hacks: take one simple package and turn it into two complete, balanced meals. We cook once, eat twice, and make healthy eating fit into real life.

The best part? You don’t need a long list of ingredients or a ton of spices. We use Spaghetti with Meat & Sauce as the base, and let the rich, savory flavor of the sauce do all the work.

To turn it into a balanced, nutritious meal, we just add nuts & extra veggies.

 

 

Makes 2 servings
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • 1 package Trader Joe’s Spaghetti with Meat & Sauce (frozen)
  • 16 oz yellow squash, sliced
  • ¼ cup unsalted slivered almonds (raw or dry toasted)

 

Directions:

  1. Spray a pan with oil and preheat on medium. Add sliced squash in a single layer. Cook until browned on one side (about 3 minutes), then stir and sauté another 2 minutes until tender. Remove and set aside.
  2. In the same pan, add the spaghetti. Cover and cook on low for 5 minutes. Remove lid, turn, and cook another 5 minutes.
  3. Stir the squash back in and cook until everything is warmed through.
  4. Plate half for today and store the other half for tomorrow. When ready to eat, top with 2 tablespoons of almonds for added crunch.
