Watermelon Mint Smoothie
This nutritious smoothie is unbelievably delicious. Made with thirst-quenching watermelon & cool mint, it will keep you hydrated on a hot day!
The watermelon is packed with antioxidants and vitamins A&C. The banana is high in potassium & fiber (and makes an excellent sweet flavor booster). The Greek yogurt provides protein to make this smoothie a complete, well-balanced breakfast or morning snack.
Makes 2 servings
All ingredients purchased @ Trader Joe's
- 2 cups fresh watermelon (cut into small chunks)
- 1 banana (freeze the banana in advance for creamier consistency)
- handful of mint
- ½ cup nonfat plain Greek yogurt
- 2 handfuls ice
Place ingredients in blender in order listed.
Blend well and then pour into two glasses or containers.*
*This smoothie keeps well for up to two days if stored in the fridge in a container with an airtight lid (such as a mason jar). It may separate, which is perfectly natural. Just shake it up and you’re good to go!
