Chicken Chile Mac Veggies & Cheese


When you’re in the mood for creamy, comforting mac & cheese, but want to keep it healthy, this is your go-to recipe.

We’ve given this iconic dish a nutritional upgrade by adding plenty of veggies & protein to Trader Joe’s Hatch Chile Mac & Cheese. This quick & easy strategy boosts nutrients, increases volume, and decreasing calories, sodium & saturated fat per serving.

The hatch chiles have a bit of a kick, so if you’d like a milder option, use Joe's Diner Mac 'N Cheese instead.

This recipe is for two servings so you can eat one serving tonight and save the other for tomorrow night. (Cook once, eat twice!)



Makes 2 servings
All ingredients purchased @ Trader Joe's



  • 1 package Sliced Mushrooms (white or crimini)

  • 12 oz Asparagus (chopped)

  • 6 oz Grilled Lemon Pepper Chicken* (diced)

  • 1 package Hatch Chile Mac & Cheese (frozen)



  1. Spray a pan with oil and sauté the mushrooms until nicely browned.

  2. Add the asparagus, stir, and cook 4 more minutes.

  3. Add the chicken and Mac & Cheese. Continue cooking until all ingredients are heated through, about 6 more minutes.

  4. Place half in a bowl for today and store the other half in fridge for tomorrow.


*Prefer a vegetarian version? Replace the chicken with 6 oz. Organic Extra Firm Sprouted Tofu.
