Cowboy Caviar Breakfast Burrito


This quick & easy recipe combines savory eggs, sweet & spicy salsa, and creamy avocado in a whole wheat tortilla.

Trader Joe’s Cowboy Caviar Salsa, a beautiful blend of vegetables, spices and lime, adds tons of flavor and nutrition.

Plus, the protein in the eggs and healthy fats in the avocado make this a hearty meal that will keep you full throughout the morning. In fact, it’s so satisfying, you may even want to have it for dinner!

Makes 1 serving
All ingredients purchased @ Trader Joe's



  • oil spray

  • handful baby spinach

  • ½ cup egg whites

  • ½ whole wheat tortilla

  • ¼ medium avocado, sliced

  • 2 tablespoons Cowboy Caviar Salsa

  • 1 (6 oz.) container raspberries



  1. Spray a pan with oil and sauté the spinach over medium heat for 1-2 minutes.

  2. Add the egg whites and cook another 2-3 minutes. Use spatula to stir frequently until egg whites are cooked through. Remove from heat.

  3. Place the half tortilla on a plate and then layer some of the egg scramble, sliced avocado, and one tablespoon Cowboy Caviar. Roll up to make a burrito.

  4. Enjoy the raspberries and any remaining eggs & Cowboy Caviar on the side.
