Pumpkin Pie Oatmeal
This delicious oatmeal is especially satisfying on cold mornings! In fact, it feels like you’re eating pie for breakfast!
But don’t worry, it’s also incredibly nutritious. Pumpkins are packed with nutrients like vitamin A, vitamin C & potassium. And oatmeal is a great source of fiber, B vitamins, iron, magnesium, zinc & manganese.
Keep in mind that Trader Joe’s canned Organic Pumpkin is a seasonal item, so be sure to stock up whenever you see it on the shelves. You won’t want to wait another year before your next pumpkin fix!
Makes 2 servings
All ingredients purchased @ Trader Joe’s
Ingredients:

1 cup unsweetened almond milk (vanilla or original)

2 packets (1 cup dry) unsweetened instant oatmeal

½ cup organic pumpkin*
- *If pumpkin is out of stock, use one banana in place of the pumpkin.

¼ cup pecan pieces

¼ cup pomegranate seeds

optional: drizzle of agave syrup
Directions:

Combine the milk, oatmeal & pumpkin.

Cook in microwave for two minutes or on stovetop for five minutes.

Place half the pumpkin oatmeal in a bowl for today and store the other half in an airtight container in the fridge for tomorrow.

When ready to eat, top with two tablespoons pomegranate seeds & two tablespoons pecan pieces.

To reheat second portion: add two tablespoons water or almond milk and heat on stovetop or microwave. Or simply enjoy it cold!
- FLAVOR BOOST: You can add pumpkin spice, cinnamon, nutmeg or vanilla.
