Spicy Mexican-Style Shrimp Riced Cauliflower

 

If you love Mexican food, but don’t want the extra calories, this is the recipe to use. It’s full of flavor and super healthy.

We’ve kept the sodium in check by using just a half pack of the Spicy Mexican-Style Riced Cauliflower for two servings. Plus, we’ve added shrimp for extra protein and veggies for a nutritional punch!

Make this into a well-balanced meal by pairing it with brown rice, quinoa or a whole wheat tortilla.

 

 

Makes 2 servings
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • oil spray

  • ½ bag (8 oz.) Argentinian Red Shrimp*

  • 1 lemon, juiced

  • 1 teaspoon Cuban Style Citrusy Garlic Seasoning Blend

  • ½ bag Spicy Mexican-Style Riced Cauliflower

  • ½ bag Fire Roasted Bell Peppers & Onions

  • 1 avocado, diced

* The night before, pour half the bag of shrimp into a zip-top bag and place in the fridge to defrost overnight.

 

Directions:

  1. Spray pan with oil, place on medium heat and add the shrimp.

  2. Squeeze the lemon over the shrimp and add the seasoning.

  3. Sauté two minutes on each side and then set shrimp aside.

  4. In the same pan, heat the Mexican Style Riced Cauliflower and the Fire Roasted Bell Peppers & Onions for five minutes.

  5. Add the shrimp back to the pan and cook three more minutes.

  6. When ready, place half on a plate for today and half in an airtight container in the fridge for tomorrow.

  7. Each day top with half avocado. Enjoy!
