Sri Lankan Cashew Curry with Sunnyside Up Egg

 

Perfect for busy nights, this nutritious, satisfying dish is ready in just 10 minutes. It features a creamy, aromatic coconut sauce seasoned with cinnamon, curry leaves, and cumin.

We add brown rice for extra fiber and an egg & cashews for protein. This hearty vegetarian dish is a weeknight favorite.

 

 

Makes 2 servings
All ingredients purchased @ Trader Joe's

 

Ingredients:

  • 1 package cauliflower florets (cut into small pieces)
  • ½ pouch Organic Brown Rice (frozen section)
  • 1 package Organic Sri Lankan Curry & Seasoned Rice with Cashews
  • 2 eggs
  • 12 unsalted whole cashews (raw or roasted)

 

Directions:

  1. Spray a pan lightly with oil, preheat on medium, and sauté the cauliflower 2-3 minutes.
  2. Add the frozen rice & Sri Lankan Curry. Cover and cook 5 more minutes.
  3. When done, store half in fridge for tomorrow and place half on a plate for today.
  4. Each night, cook one egg sunny side up. Crack egg into pan, cover, and cook 2 minutes or until it reaches your desired firmness.
  5. Sprinkle 6 cashews on tonight's curry and top with the cooked egg.
